Family Recipe Box
**Many of these recipe's are, in the words of Sandra Lee, semi-homemade making it easier for my fellow mom's out there to get a good dinner on the table in a reasonable amount of time**
Non-Lasagna (It's like lasagna, but not)
Ingredients:
1 (8oz.) package of egg noodles
1 ½ lbs ground beef
4 fresh garlic cloves, minced
½ teaspoon salt
½ teaspoon pepper
1 (24/26oz.) jar spaghetti sauce (I use a chunky vegetable style)
½ teaspoon Italian seasoning
1 (10oz.) package frozen chopped spinach, thawed and drained
2 cups (8oz.) shredded Monterey Jack cheese (or Monterey Jack blend)
1 ½ cup sour cream
1 large egg, slightly beaten
½ teaspoon garlic salt
2 ½ cups (8oz.) shredded Parmesan Cheese (grated works as well if this is what you have)
Worcestershire Sauce
Directions:
-Preheat oven to 350 degrees.
-Cook noodles according to directions on package.
-Meanwhile, brown beef, seasoned to your liking with Worcestershire sauce and the next 3 ingredients in a skillet over medium heat. When cooked through, drain and return to skillet.
-Stir spaghetti sauce and Italian seasoning into beef mixture.
-Add spinach to large mixing bowl with next 4 ingredients. Fold in noodles, beef mixture, and ½ cup of grated Parmesan cheese.
-Pour into 13x9”greased baking dish and top evenly with remaining 2 cups of Parmesan Cheese.
-Bake at 350 degrees for 40 minutes or until bubbly and golden.
-Enjoy!
Makes 6-8 servings
Smokey Mountain Chicken
Ingredients:
4 large boneless chicken breasts
1 bottle hickory-smoked or brown sugar barbeque sauce (whichever your fam prefers)
8 slices of flavor (apple/hickory, etc) smoked bacon (microwave or regular)
chicken flavored rice (any brand bag or box--ex: rice-a-roni)
1/2 of a 12/15oz. can diced italian seasoned tomatoes
approx. 1 cup mild finely shredded cheddar cheese
Recipe:
1- Preheat oven to 400 degrees.
2- Place chicken breasts in greased baking pan and smother in barbeque sauce.
3- Bake for 25 minutes--while baking, prepare bacon and rice. Add tomatoes to rice.
4- On beds of rice mixture, place chicken breast and brush with barbeque sauce. Break 2 slices of bacon in half and place on chicken, the barbeque sauce will act as sort of glue. Sprinkle (or smother) with cheese.
5- Microwave dish for approx. 40 seconds or until cheese is melted.
Suggestions:
- i typically make corn on the side with this dish as it is easy and delicious to mix into the rice and tomatoes
- for chicken rice - knorrs makes a good one that cooks in the microwave in all of 12 minutes while the rest of the food is baking
- for the bacon - a few times i have substituted turkey bacon (preferably butterball) and it has worked out well, healthier too, not that that really matters, what with all the cheese the recipe calls for
- amounts--you can really play up this recipe to suit your family's tastebuds--meaning, use as much bacon, cheese, tomatoes, etc. that you would like. i'm only giving you approximates on what i use in my own recipe for my family of 5 (2 of which being a baby and another tiny munchkin, meaning that really only 3 grown people are eating, which is why i specify most recipe's for a standard fam of 4)
Slap Your Mama Good Stuffed Green Peppers
Ingredients:
6 green bell peppers, tops cut away and seeds removed
1/4 cup dried onion spice
1/2 cup finely chopped red bell peppers
1 lb. ground pork or beef or an even mixture of both
1 tablespoon minced fresh garlic
1/4 cup dried parsley
1/2 teaspoon salt
3/4 teaspoon black pepper
2 cups cooked long or medium grain white rice
2 8oz. cans of tomatoe sauce
water
grated parmesan or parmesan/romano cheese blend
Directions:
-Preheat over to 350 degrees.
-In a large pot of boiling water, parboil the peppers until just tender--3 minutes. Drain water and leave peppers in pot.
-In a large saute pan, brown meat along with minced garlic and half of the dried onions and parsley. While meat is browning prepare rice.
-Drain meat mixture and add to prepared rice along with other half of dried parsley and onions, salt, pepper, and 1 can of tomato sauce. Mix well.
-Stuff peppers with meat and rice mixture.
-Pour enough water into a baking dish to just cover the bottom, about 1/8 inch deep
-Stand peppers in dish and bake for 30 minutes or until peppers are very tender and filling is heated throughout. Meanwhile, warm the other can of tomato sauce in a sauce pan over low heat.
-When peppers are finished baking, top with heated tomato sauce and parmesan cheese.
-Enjoy!
